Everyone will love this one! Salty whipped feta turns into a creamy dip that’s super fast and simple to assemble. Inspired by Mexican street corn, but deconstructed. Feta resembles closely the taste and texture of Mexican cheese typically used for street corn, Cotija. However it is not commonly available and typically found in specialty food markets. That’s why we opted for feta here. We wanted to provide something that was much more approachable and familiar to our audience.

Once you’ve whipped up the feta in a food processor or high powered blender, spread it into a shallow bowl. We recommend loading on the toppings. Because the feta is salty, you really want to make sure that each chip will get a little bit of everything on it. So extra corn, extra avocado, extra bacon and a good drizzle of chipotle aioli.
