Mexican inspired street tacos perfect for Cinco de Mayo! Delicious grilled flank steak loaded with grilled corn, red onions, fresh pico de gallo and finished with our cilantro green sauce and a dash of hot sauce.

Its safe to say that we are definitely Mexican food lovers! We are all about the bold flavors and fresh ingredients that Mexican food brings to the table and lets be honest this food is so fun to eat whether its family style communal eating to individual plates, everything is so bright and colourful and just makes you hungry!

These tacos are so easy to make and the perfect recipe for Cinco de Mayo that is family friendly but also perfect for entertaining since you can serve this as a build your own taco bar! The Carne Asada flank steak is made with a citrus marinade and the steak is grilled and then chopped into bite size juicy pieces. Flank steak or skirt steak works best for this kind of recipe, you can buy a bigger piece if your serving a larger crowd or a half size if your making this dinner for two.

You’ll need a handful of ingredients to make these tacos like fresh pico de gallo, grilled corn, chopped red onions, limes, cilantro and of course the steak. We like to chop up the steak into very thin slices and then chop those slices into small bite size pieces so when you go for that perfect bite there wont be any chewing involved or trying to cut a large piece of steak with your teeth.

For Mexican street style tacos we highly recommend making the green sauce and serving Valentina’s hot sauce with your tacos. When your at a Mexican restaurant or even at food trucks they always have these amazing sauces for guests to add to their food and the sauces always add that extra hint of spice of bold flavor that comes with authentic Mexican food!

CARNE ASADA TACOS

Ingredients

  • 1 ½ lbs flank steak skirt steak
  • 1 cup orange juice
  • ¼ cup olive oil
  • Juices from 2 limes
  • 1 tsp cumin
  • 2 tsp salt
  • 2 tsp pepper
  • 4 cloves of garlic minced
  • ½ cup fresh cilantro chopped
  • 2 corn ears
  • Lime wedges
  • Fresh cilantro
  • Fresh pico de gallo
  • Chopped red onions
  • Cilantro Green Sauce:
  • 1 cup basil
  • 2 cup fresh cilantro
  • 1/3 cup evaporated milk
  • ¼ cup water
  • 1 tbsp balsamic vinegar
  • 2 tbsp garlic powder
  • 1 tbsp salt
  • 1 tbsp pepper

Instructions

1. In a large mixing bowl, combine orange juice, lime juice, olive oil, cilantro, salt, pepper, cumin, garlic, whisk until combined.

    2. Combine the marinade with your steak and refrigerate for at least 2 hours, the longer the better (we try to aim for 4 hours minimum)

      3. Pre heat the grill to high heat

        4. Remove the steak from the marinade and grill about 6 to 8 minutes per side. (Best cooked medium rare, if you are using thinly sliced steak, grill on each side for 2 minutes, you can coat the steak with a bit of the marinade to help get the to sizzle and achieve those grill marks as your cooking)

          5. While the steak if grilling, grill the corn until charred on all sides. About 12 minutes

            6. Remove the steak and let rest for 10 minutes. Once your steak has rested, slice really thin slices against the grain and then chop those slices into bite size pieces. You might have extra steak, store any leftovers

              7. Once the corn has cooled slightly, cut the kernels off and toss in a serving bowl.

                8. To make the green sauce: add all the ingredients to a food processor, blend until you get a dark green thick sauce -about 2 minutes. Adjust taste by adding more seasoning or cilantro.

                  9. For a build your own taco, communal style eating serve all the ingredients separately for guests or family to make their own. Place the steak bites in a dish next to your warmed tortillas and have the toppings nearby like your fresh pico de gallo, fresh grilled corn, chopped red onion slices, lime wedges, fresh cilantro and sauces

                    10. If serving the tacos already made first start by pilling the steak bites onto your tortillas, then add your green sauce and hot sauce, next add the red onion slices, fresh corn, finish with fresh pico de gallo, cilantro and a squeeze of lime
