These Italian-Style Sandwiches with Calabrian Chiles Mayo might just be my new favourite sandwich. This is a super quick and easy meal that blends together Calabrian chiles in oil with mayonnaise to make an amazing sauce served with slices of salami, prosciutto, fresh cut cantaloupe and arugula. Finish each sandwich with a drizzle of hot honey butter for an extra burst of flavour. These sandwiches are perfect cold which make them easy to pack for lunches, serve at parties or bring to picnics.
First of all, where has this sauce been all my life. It is friggen amazing and worthy of continuously keeping a batch in the fridge. This may be my new go-to sandwich condiment. All it is, is blending together the Calabrian Chiles in oil with mayonnaise until its smooth and transforms into this amazing bright orange sauce that’s got a bit of a kick but well balanced with the mayo so its not overly spicy.
For this sandwich I decided to pair it with some deli salamis and salty prosciutto, I thought they would compliment the fresh cantaloupe nicely. Because it’s summer I really wanted to use some fresh fruit in my sandwich instead of tomato to switch things up. The most common pairing being cantaloupe and charcuterie meats, so naturally i knew this would be great for a sandwich. This sandwich has it all, the sweet, the salty, the spicy, the fat and served cold. It touches on all the great elements of cooking; salt, fat, acid, heat.
