Al Pastor Burger featuring marinated ground pork and ground chuck patty with authentic Mexican ingredients. Served with grilled pineapple, fresh made guacamole, pickled red onions, cilantro, cotija and garlic aioli. Make this recipe for the ultimate summer burger!

 

This is the ultimate summer burger with big bold flavors coming from our al pastor marinated ground chuck and ground pork patty. We love al pastor tacos and basically all Mexican food so why not create an Al pastor burger. The Al pastor marinade contains guajillo chiles, chiles de arbol, ancho chiles, achiote paste and Mexican oregano for that truly authentic Mexican flavour. The burger is a combination of chiles, fresh pineapple, fresh guacamole, pickled red onions, cotija and garlic aioli.

 

For the burger we used a mixture of 80/20 so 80% ground pork and 20% ground chuck. We marinated the meat for 5 hours, shaped our patty’s (pro tip go a bit bigger than the size of your bun as the patty will shrink on the grill) and popped them in the freezer for 5-10 mins given that the patty’s are really fresh this helps them stay together before cooking them on the grill. For the marinade you can order authentic Mexican chiles directly on Amazon, get yourself some Mexican oregano, come ancho chilli powder and chipotle powder while your at it! There is a great selection of Mexican ingredients plus if you love our recipes you’ll notice we use a lot of chiles.

 

Lets talk burger toppings! To give this burger the ultimate gourmet flair we grilled some pineapple slices, made some fresh guac, added some quick pickled red onions, cotija cheese (if you can’t find cotija you can substitute for a slice of Monterey Jack cheese or just leave out), we also added some fresh cilantro and garlic aioli as our sauce.

Al Pastor Burger

Ingredients

  • 1 lbs ground pork
  • 1/2 lbs ground chuck
  • 3 dried guajillo chiles
  • 1 dried ancho Chile
  • 3 dried chiles de arbol
  • 2 tbsp achiote paste
  • 1 white onion, skins removed cut into 4
  • 3/4 cup pineapple juice
  • 1/4 cup white vinegar
  • 5 cloves of garlic
  • 1 tsp Mexican oregano
  • 1/2 tsp ground cumin
  • 1/2 tsp cinnamon
  • 1/8 tsp ground cloves
  • 1/2 red onion, halved and thinly sliced
  • 1 cup red wine vinegar
  • 1/4 cup grenadine
  • 1/2 cup lime juice
  • 1/3 cup sugar
  • 1 tbsp salt
  • Guacamole
  • Pineapple slices
  • cilantro
  • cotija
  • garlic aioli
  • burger buns
  • red leaf lettuce

Instructions

  • If Making Chile Blend: bring a pot of water to a boil and add the chili’s (ancho, guajillo and de arbol). Bring to a boil and boil for 15 mins.
  • Marinade: To a blender add the boiled chili’s, achiote paste, onion, pineapple juice, vinegar, garlic, salt, Mexican oregano, cinnamon, clove. Blend until pureed. Strain the sauce to remove any skin that didn't get blended.
  • To a bowl, add the ground pork and ground chuck (80% pork, 20% chuck) then pour about 1/2 the mixture over the meat, mix with your hands to get all those flavors into the meat, cover and refrigerate for 4 hours.
  • To make the pickled red onions, bring the red wine vinegar, sugar, grenadine, lime juice and salt to a boil then simmer for 10 minutes. Add the thinly sliced red onions to a heat proof jar with a lid and pour over the vinegar.
  • To make the burgers, form a large ball using your hands then shape into a patty. Place patty's in the freezer for 5-10 mins to keep their shape on the grill. Heat the grill to high heat, add the burger Pattys and cook for 5 mins per side. Grill the pineapple slices and toast the burger buns.
  • To assemble the burgers, add some garlic aioli to the bottom bun, next add your red leaf lettuce, grilled pineapple slice, burger patty, top with guacamole, cotija, pickled red onions, cilantro and then add some more garlic aioli to your top bun
