Crispy Buffalo Chicken Burgers with Ranch Slaw. Crispy golden fried chicken pieces dunked and soaked in a buttery buffalo sauce topped over a pile of chopped lettuce that’s tossed in a homemade ranch filled with fresh herbs and served in a lightly toasted potato bun. A super fun take on a take away fried chicken sandwich with a homemade spin.
We are HUGE fried chicken sandwich fans- so of course we make a lot of these types of recipes but try out different combos to switch things up. I love the iconic buffalo and ranch pairing. Its a classic and works so well together. Whether you’ve had buffalo wings with the ranch dipping sauce on the side or a buffalo ranch sauce you know what i’m talking about. Buffalo ranch sauce is so popular right now, if you don’t know what that is, its ranch sauce mixed with some type of hot sauce to create buffalo ranch. We’re seeing it on a lot of fast food menus now as the base sauce for their chicken sandwiches.
While I was inspired by the buffalo ranch combo, I also pulled inspiration from Tik Tok’s trending grinder salad which mimics coleslaw but made with chopped lettuce instead and used as a topping for sandwiches. The grinder salad is a mix of mayo, red wine vinegar, dried oregano, red chili flakes, chopped pepperoncini’s and salt and pepper. It’s absolutely fantastic and a game changer for sandwiches, the only dinger is that it gets pretty wet so the sandwich gets soggy quick. You definitely need to be careful of the amount of liquid you use to mix with the lettuce and stay on the creamier side so that your not left with something soggy to eat.
instead of making the grinder salad I decided to make my own ranch dressing and use that to toss my chopped lettuce head in. It’s amazing and works with any sandwich so you don’t need to make it for this particular one. Homemade Ranch begins by mixing together some mayonnaise, sour cream and a bit of buttermilk. Now you could use some Greek yogurt to make it a touch healthier if you wanted too. Toss in fresh parsley, dill and chives and finish with ground garlic, onion, celery salt and season with salt and pepper. There you have it, a killer quick ranch sauce.
