These chewy and buttery Holiday Blondies are super fun and easy to make, with just a few ingredients all made in one bowl and studded with tri-coloured chocolate chips, holiday m&m’s, and peanut butter bells.
It’s Christmas baking season and cookie box making time, which means these are the perfect addition to those holiday boxes. They have a light brownie texture and cross between a chocolate chip cookie for the perfect balance of thick, chewy cookies but a brownie square. These soft and gooey chocolate filled blondies just scream Christmas time! Filled with red, green, and white and they are super easy to make which makes them great if you need something last minute.
These fun little cookie bars are just like making chocolate chip cookies. A few key ingredients, butter, sugar, flour, eggs and chocolate. It may not appear like much when you transfer the batter into the baking dish, but they puff up quite a bit in the oven and will become nice and thick in the end. If you prefer much larger bars, I would suggest using a smaller 9×9 pan or doubling the recipe for a larger dish.
You’ll want to take these out of the oven when they are golden brown around the edges and have puffed up in the middle. a good sign is that they will have doubled in size and the middle should still be light. These baked for exactly 25 minutes and I let them cool completely in the pan before touching them. If you think they need to bake longer, I would give them no more than an extra 5 minutes. More cooking happens in the pan as they set and cool. It’s similar to when you let meat rest so that the juices can re-distribute around if that makes sense.
