These are a new twist on a classic ginger molasse cookie that’s mixed with a chocolate chip cookie and you get this cross over chocolate chunk ginger cookie. They’re thick, chewy, and slightly crispy at the edges and also laced with chocolate chunks and molasses. This is such a good cookie to kick start your holiday baking.
It’s doesn’t scream Christmas or look it so it’s perfect for end of November baking and transitioning into December. These could be included into a holiday cookie round up because they are just so delicious and chewy and they have different flavours and textures that gives you some good variation in types of cookies. Note that this is considered a small batch of cookies and yields 14-15 cookies when using a 2 inch cookie scoop. They come out nice and big and round so if you wanted to make them smaller and have a bit more cookies you can use a 1 inch scoop.
