Homemade cheeseburger pizza. Fresh beer dough pizza topped with smoky chipotle chili ground beef, shredded American cheddar, shredded greens, buttered pickles and a generous amount of burger sauce. When a cheeseburger meets pizza, it all comes together for the ultimate meal.  The key to making this the best cheeseburger pizza is to bake it only with the cheese and meat mixture and  as soon as its ready top it off with your burger fixings of lettuce, pickles, sesame seeds and sauce.

Cheeseburgers and pizza are just so damn good! Sometimes they are a once a week occurrence. There’s nothing like bitting into a pizza that taste exactly like a cheeseburger. It’s a slice of heaven. Nothing traditional about this in the slightest. Its just good tasting food. Easily customizable to suit your personal burger toppings of choice, just add them on! Loaded with loads of smoky, spicy, fresh, herbed ground beef simmered in beer, spread onto a beer dough that couldn’t be easier to make. This is exactly the thing I want to be eating outside on the patio while enjoying some drinks with friends and family.

BEER DOUGH

Beer dough is the way to go! Especially for pizza because you’ll be using it to make something savoury the subtle hint of beer is perfectly masked and you wouldn’t even know there’s beer in the dough. Why it works so well is because the yeast in the beer reacts with the starches in the flour which creates some bubbling and foaming indicating that it is reacting as it should so that it can rise and start to leaven. The beer helps lighten the texture but will still require time to rest. Using instant yeast will shorten the amount of time the bread needs to rest and rise, whereas if you are using active dry yeast it will require an overnight rest. When using beer to make dough, it can be substituted for water as a 1:1 ratio. Be sure to use room temperature beer and not cold beer as this will slow down the fermentation process quite a bit.

COOKING PIZZA

Fresh pizza needs to cook at a high heat. This is why doing it on your BBQ is a great option because it warms up so quickly and reaches those temperatures a little better than your oven. Plus you don’t have to preheat your oven for long or have the temperature in your house warm up so much because of it.. especially on hot days. A pizza stone or a baking sheet are both equally good to make this recipe, so use whatever tools you have at your disposal.

Ingredients

  • 1 pizza dough ball homemade or store bought (see notes)
  • 1/2 lb lean ground beef
  • 1 TBS butter
  • 1 small yellow onion finely chopped
  • 1/4 cup chipotle chilies in adobo diced
  • 1 TBS tomato paste
  • 2 cloves garlic
  • 1 tsp smoked paprika
  • 1 tsp chipotle chili powder
  • 1/2 tsp ancho chili powder optional
  • 1/2 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1 TBS fresh oregano substitute dried
  • 1 tsp fresh cilantro
  • 1 TBS apple cider vinegar
  • 1/2 cup light beer or water
  • 1 cup American cheddar shredded
  • Toppings:
  • shredded lettuce such as romaine
  • buttered pickles
  • burger sauce
  • sesame seeds

Instructions

  • In a large skillet melt the butter and cook the onions until softened a bit for a few minutes. Add the ground beef mixture and crumbled into bite size pieces as it cooks. Stir occasionally and season with some salt and pepper cooking until nicely browned.
  • To make the sauce: to a blender or food processor, add the chipotle chilies, tomato paste, dried spices, herbs, garlic and apple cider vinegar. Blend until combined mixture resembles a sauce. Add a touch of water if needed to help the process.
  • Once the beef has browned, pour the sauce mixture overtop stirring to coat evenly. Pour in the beer if using or water, bring to a boil and reduce to simmer. Cook until most of the liquid has cooked down.
  • Preheat the oven or BBQ to 500 degrees. Preheat a pizza stone if using according to directions otherwise you can use a baking tray.
  • Press the dough out using your fingers to stretch large enough to cover the pizza stone. If using a baking tray, grease with a touch of oil and press the dough out into the pan stretching to cover its entire surface.
  • To assemble: use a small amount of the liquid from the beef mixture and spread across the dough. (roughly 2 TBS) generously top with the seasoned ground beef and shredded cheese. Bake for 10 minutes and rotate the pizza and bake for another 3-5 minutes until the crust is golden.
  • Once the pizza has finished baking, finish assembling with the remaining ingredients. Top with shredded lettuce, sesame seeds and pickles. Finish it off with some burger sauce and enjoy!

Notes

Beer dough:
4 cups 00 flour, or bread flour if you don't have
1 tsp instant yeast
1 tsp salt
473 ml amber ale
*In a large mixing bowl combine all the ingredients except the beer. Mix thoroughly. Pour the beer into the mixture continuously mixing until the dough forms and sticks together. Remove from the bowl and kneed using your hands forming a ball. Place in a bowl and cover with plastic wrap or a damp towel. Let rest 1-2 hours until doubled in size or up to 24 hours. Afterwards, divide into 2 portions. Prior to using let rest for 1-2 hours until it comes to room temperature.
*Store in an airtight container with a pinch of oil if using within a few days or freeze.
