Overnight coffee flavoured oats mixed with chia pudding and topped with a simple chocolate nice cream that’s finished with puffed quinoa cereal. A breakfast treat that’s super nutritious and quick to assemble and loaded with fibre, antioxidants, and protein.

Combining two things that breakfast needs- coffee + chocolate. Coffee for us is a must and well the chocolate is the cherry on top we need for an extra quick start to our mornings.

These pots combine delicious textures with smooth and crunchy bits that are scrumptious and feel a lot like dessert for breakfast.

It couldn’t be easier to make! If you are familiar with making chia pudding or overnight nights this is a great recipe to mix up your flavours and try something new. For all you first timers.. well you’re in for a treat. It really is as easy as mixing oats with milk and placing it in the fridge. Almost like making a bowl of cereal. Here is the puffed quinoa we used which we purchased at our local grocery store in the cereal aisle.

CHOCOLATE NICE CREAM

The base for any nice cream starts with mixing together frozen bananas until they become smooth and creamy in the blender or food processor. This step takes about 2 minutes until you can see the transformation in texture. From there you can customize it and add whatever flavour you want to make. Ingredients

  • Overnight oats + chia pudding
  • 2 TBS chia seeds
  • 2 cups rolled oats
  • 1 tsp instant coffee ground
  • 3 1/2 cups plant-based milk cashew or almond
  • Chocolate nice cream
  • 2 frozen bananas
  • 1 TBS cacao powder
  • 1 TBS maple syrup
  • garnish: puffed quinoa cereal

Instructions

  • Combine all the ingredients for the overnight oats in a large glass jar with a good seal. Mix well and refrigerate overnight. Mix again before serving. There shouldn’t be any liquid left.
  • For the nice cream: in a food processor or blender add bananas. Blend until smooth. Once smooth add the cacao powder and maple syrup and blend until well combined.
  • To serve: layer the oats + chia pudding and top with a generous amount of nice cream. Garnish with puffed quinoa cereal.
  • Serve immediately.

Notes

Optional: for creamier texture, stir in a bit of yogurt into the oats when assembling.
Store: oats + pudding up to 3-5 days in refrigerator.
