The vibrant orange persimmons placed over a pillowy blanket of whipped ricotta with a hint of blue cheese is so pleasant and mouth watering. For this snack, make sure the persimmons are ripe and chose the Fuyu variety which are more versatile and edible even if they haven’t fully ripened. Grab a handful the next time your at the store and add these to your salads or cheese boards. If you cant find persimmons or they are no longer in season, pears also work for this recipe, peaches or plums.
