Delicious over the top sausage and egg breakfast sandwich served over a crispy hashbrown, topped with a sunny side up egg and crispy fried onion ring makes for a hearty breakfast sandwich perfect for brunch or lunch.

Let’s be honest, the sausage egg McMuffin sandwiches are delicious. Every now and then, we find ourselves craving one of these delicious bad boys. So we decided to make some homemade versions which you can totally make the sausage patties ahead of time and freeze them for quick meals. In our version we added a crispy hashbrown along with a fried onion ring and topped with cilantro oil and hot sauce. The sauces are completely optional and for a quick breakfast feel free to add a sauce you have on hand and one you typically enjoy with your eggs.

We made our own homemade sausage patties from scratch. In a bowl simply combine the ground pork, dried herbs like crushed fennel seeds, onion powder, rosemary, parsley, garlic, paprika, salt & pepper and of course maple syrup. You want the patties to be large but thin as they will shrink and fatten up while cooking.

We indulged and made our own onion rings to top this sandwich, its totally optional since with the onion rings the sandwich isn’t considered healthy but without it is, especially since we made our own sausage patties. You can use regular onion slices, cooked onions and add avocado to make it lighter on the calories.

Its never to early to start planning your weekend brunch! Feel free to make this your own and substitute the onion rings for a slice of tomato, smashed avocado, bacon, the possibilities are endless!

SAUSAGE & EGG BREAKFAST SANDWICH

Ingredients

  • For the sausage patties:
  • 2 tbsp olive oil
  • 1 lb ground turkey
  • 1 tbsp fennel seeds
  • 2 tsp dried rosemary
  • 2 tsp paprika
  • 1 tsp onion powder
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp maple syrup
  • For the sandwiches:
  • Cheddar cheese slices
  • Buns or English muffins
  • Toasted hashbrown patty
  • Eggs
  • Optional:
  • Cilantro oil
  • Hot sauce
  • Onion rings
  • For the onion rings:
  • 1/2 cups all-purpose flour
  • 1/2 cups cornstarch
  • 1 tsp. kosher salt plus more for serving
  • 1 large egg whisked
  • 3/4 cups club soda or chilled light beer
  • 2 cups seasoned panko bread crumbs
  • 1 tbsp cajun seasoning
  • 1 onion cut into 1/4 inch slices
  • oil for frying

Instructions

If making onion rings follow these steps, if not skip to sausage patties:

  • 1. Make tempura batter: in a large bowl, whisk to combine flour and cornstarch. Whisk in club soda then stir in egg. Stir until just combined. (Some pockets of dry flour are OK!)
  • 2. In a large zip loc bag, add the panko breadcrumbs and cajun seasoning
  • 3. Heat frying oil, once the oil is hot enough, working in batches, dip the onions into the tempura batter, letting the access drip off, then add to zip loc bag and shake until the rings are coated in panko then repeat this step to ensure the rings are fully coated, add the rings back into the tempura then back into the panko. Fry in batches until the onion rings are golden brown and crispy. Set on wire rack or paper towel to remove the access oil. Season with salt and set aside.

To make the patties:

  • 4. In a large bowl, mix together the sausage patty ingredients using your hands.
  • 5. Form patties, remember to make them larger but thin as they will shrink and puff up during the cooking
  • 6. Heat a skillet over medium high heat with olive oil. Once the skillet is hot, add the patties, cooking 5 minutes per side until the patties are golden brown on each side and cooked all the way through.
  • 7. Meanwhile, pre heat oven to 350 degrees
  • 8. Once the patties are cooked, place them on a baking tray and add your cheese slices over top. Melt cheese over the sausage in the oven -about 2-3 minutes, remove and set aside.
  • 9. While the cheese melts, prepare the sunny side up eggs.
  • 10. Melt ½ tbsp butter into a pan, crack eggs and cook sunny side up. Eggs are ready when the white are cooked but the yolk is still runny.
  • 12. If using English muffins, this would be the time to toast your buns
  • 13. To assemble the sandwich: Place crispy hashbrown on the bottom bun, next add the sausage patty with cheese, top with sunny side up egg, season with pepper. Optional to add a drizzle of cilantro oil or hot sauce and top with fried onion rings and top bun.
  • Enjoy

Notes

To make cilantro oil, add 2 cups of cilantro to a food processor along with juices from 1 lime, 4 cloves of garlic, salt & pepper and olive oil -about 5 tablespoons. Blend until you get a dark green oily consistency
