We love having a family Christmas morning brunch and if you have kids you know they love waffles or pancakes! Why not make a festive family breakfast.

After all the gifts have been unwrapped, why not fill the house with the smell of Christmas! These gingerbread waffles smell delicious, they are so easy to make and so festive. Make sure to add enough molasses, ground ginger, cinnamon & nutmeg to get that gingerbread flavor into the waffles for some serious Christmas brunch festivities.

Serve these with whipped cream, a light dusting of powdered sugar, fresh fruit, butter and maple syrup!

HOLIDAY GINGERBREAD WAFFLES

Ingredients

  • 2 cups all purpose flour
  • 1 Tbsp sugar
  • 1 Tbsp baking powder
  • ½ tsp salt
  • 1/2 Tbsp cinnamon
  • 1 ½ tsp ground ginger
  • 1 tsp nutmeg
  • ½ tsp cloves
  • ½ tsp all spice
  • 2 large eggs
  • ½ cup melted butter
  • 1 ¾ cups buttermilk
  • 1 tsp vanilla extract
  • ½ cup molasses
  • To serve:
  • Maple syrup
  • Whip cream
  • Fresh fruit
  • Powdered sugar

Instructions

  • 1. Pre heat waffle iron
  • 2. Spray waffle iron with butter
  • 3. In a large mixing bowl, stir together flour, baking powder, sugar, cinnamon, nutmeg, cloves, ginger, all spice and salt
  • 4. Pour in buttermilk, eggs, vanilla, melted butter and molasses into the dry ingredients. Whisk until well combined -do not overmix
  • 5. Pour waffle mixture into preheated waffle iron. Amount of batter varies depending on the type of waffle iron. Scoop batter into batches and cook according to manufacturers directions. We like ours golden brown and crisp
  • 6. Keep finished waffles warm in the oven while cooking the remaining batches. Spray with butter spray in between batches
  • 7. To serve, top with whipped cream, butter, powdered sugar, fresh fruit and maple syrup.
