Summer is just around the corner and those 4 glorious months of warm weather scream for delicious refreshing frozen treats, summer grilling, sipping on cold drinks and hanging out with friends!
Were huge fans of acai smoothie bowls and decided to make our own frozen sorbet with a hint of blueberries and fresh lemon. The sorbet turned out so good the lemon adds just the right amount of tartness.
Where to buy acai packets? We were able to get Sambazon frozen acai packets at our local Sobeys. I’ve seen these packets sold at Whole Foods before as well.
How Long Does it Take to Freeze Blueberry Acai Sorbet?
Since were using frozen wild blueberries and only slightly thawing the acai packets, everything is added to the food processor and can be served immediately or freeze for an hour or so to get a harder consistency.

Ingredients
1cupfrozen blueberries
1/4cupcorn syrup
1/3cupof water –use only to loosen ingredients in food processor if necessary
4packets frozen açai pureeslightly thawed
Juices from 1 lemon
½tablespoonlemon zest
Instructions
1. Add the slightly thawed acai packets, frozen blueberries, corn syrup, lemon zest and lemon juice to the food processor.
2. Process the mixture until the blueberries become crumbly, pressing down the mixture with a spatula as needed. Add the 1/3 cup of water if you’re having trouble blending. If the mixture is blending smoothly leave water out.
3. Continue to process until the mixture becomes smooth and evenly processed.
4. Once everything is smooth, taste for sweetness, and add additional corn syrup or honey as needed.
5. You can serve this sorbet immediately or transfer it to an air-tight container and freeze for a couple hours for a harder consistency.
