Healthier, simple roasted turkey breast seasoned with fragrant garlic, herbs and lemon served with a flavourful olive dressing. A deliciously healthy recipe that is gluten free, low calorie and paleo!
Rather than making your go-to chicken weeknight dinner we decided to change up the protein and offer this delicious lightened-up recipe for roasted turkey breast. It’s buttery, juicy, healthy and perfectly seasoned.
We don’t eat turkey very often, mostly during holidays so I thought why not introduce turkey more often into our weekly rotation. These days were having to limit the amount of times we go out to the store and often shop for 2 weeks of groceries at a time, sometimes it can be difficult to find everything you need or chicken is out of stock or your just tired of eating the same proteins and you’re looking for something new that is still healthy and low calorie.
This roasted garlic butter turkey breast with lemon olive dressing is so flavourful and you only need a few ingredients to put together a delicious meal.
First we prepared the turkey breast and went with a boneless and skinless breast you can certainly make this with a skin on turkey breast and just broil at the end for a nice golden crispy skin. Season the turkey with salt & pepper than mix together some chopped garlic, fresh parsley, fresh oregano and chili flakes than rub mixture on the turkey.
Next you want to add some sliced lemons to the pan as well as lemon halves which we’ll use for the dressing and whole garlic cloves. For a buttery turkey breast we added slices of butter on top of the turkey and roasted it in the oven until the turkey was fully cooked. You may have to adjust the cooking time depending on the size of the turkey breast, if you have skin on or bone in it will take longer.
The dressing is what really makes this so flavourful. We used some of the roasted garlic that was placed around the turkey and the juice from the roasted lemon halves. We added these to the leftover seasoning mix and added chopped fresh basil, a splash of white wine vinegar, a splash of olive juice and mixed everything together.
To serve simply spoon some of the dressing on top of the turkey breast with a side of roasted kale!
We hope you enjoy our weeknight dinner recipes!
