Everyone loves crispy seasoned fries so why not change it up and make fries that aren’t of the potato variety! Like sweet potato fries, carrots make fabulous fries you can dip that have a slightly sweet taste and crisp up perfectly in the oven.
These days with everyone being stuck at home, maybe you’re finding dinner time a bit challenging and looking for ways to introduce healthier alternatives to your kids. French fries are always a big win and there are plenty of ways to make fries at home so why not try carrot fries, plus you get all benefits of eating carrots like vitamin A, antioxidants and fiber.
Carrot fries like sweet potato fries have all the right starches for a nice crisp golden brown outside, you get a nice fry and they taste delightful!
For a delicious crunch we dipped our carrot fries in an egg wash and parmesan mixture. Season these delicious carrot sticks with salt, pepper, grated Parmesan and parsley.. YUM These fast and easy baked carrot fries are the perfect addition to your weeknight dinner plans! Served them with a nice of spicy chipotle mayo and your all set.

1. Preheat the oven to 400f.
2. Line a baking sheet with parchment paper
3. Slice the carrots into long thin pieces – about the size of a French fry (no need to peel).
4. Mix the egg and water and place in a shallow dish. Place the Parmesan into another shallow dish.
5. Dip the carrot sticks first in the egg wash, allow any excess to drip off, then roll in the
parmesan and place on the baking tray. Repeat until you’ve used all the carrots.
6. Sprinkle with the salt and pepper, and place in the oven for 15-20 minutes, turning once
until dark golden brown.
7. To make the chipotle mayo, mix together the mayonnaise, chipotle powder, onion powder, garlic powder, chili powder and salt & pepper in a small bowl.
8. Take the fries out of the oven, place on a plate and sprinkle with parsley. Serve with the
chipotle mayo dip.
