Healthy homemade banana bread granola that’s naturally sweetened and topped with fresh fruit for a quick and easy healthy breakfast.
Granola is an easy breakfast staple that can be used as a blank canvas for mixing sweet and savory ingredients to create a delicious healthy treat you can use in parfaits, sprinkle on top of yogurt and eat as a snack. Here we’re sticking with a banana bread theme but the base ingredients can be used for different variations where you can swap fresh or dried fruits and different nuts. The options are endless.
Homemade granola takes just a few minutes to combine everything together. The work all happens in the oven once its spread out on a parchment paper-lined baking tray. It should always be stirred halfway through the cooking time to allow for an even cooking and golden ratio so that you aren’t left with areas that are too dark. Granola can keep up to 2 weeks stored in an airtight container and doesn’t need to be refriderated. Once you’ve got the granola ready the rest is easy.
The parfaits are assembled in a pinch. We like to place some of the granola on the bottoms, followed with a layer of yogurt, and topped with a sprinkle of granola, berries and honey. For parfaits on the go or made ahead, simply add the granola last to keep it fresh and crisp.
