About Us

No holiday meal is complete without the stuffing. Our version is an easy healthy side dish that will complete any table and can easily be made in advance. Find all the classic stuffing flavours; onions, carrots, celery, sage, and thyme finished with toasted sage breadcrumbs. Traditionally made from bread we’ve decided to steer away and switched things up by making it with wild rice as the base.

Stuffing tends to be one of those sides that most people look forward too. It’s one of our faves and we certainly wouldn’t want to dig into something that didn’t turn out good. It can be a little embarrassing if you screw it up… I mean it’s supposed to be the side that’s the easiest and one you don’t have to worry about making after all. I am sure we have all had our fair share of bad stuffing. Whether it was soggy, mushy, over cooked.. In order to ensure you have executed everything to perfection and that nothing turns to literal mush our wild rice stuffing is like serving two sides in one that’s mush free! Just don’t over cook the rice! Slightly undercooked is best especially if making in advance as it will continue to cook in the oven when re-heated.

It’s hard enough as it is to turn down fresh bread even though we know it’s not a healthy thing to eat it just taste so good.. the French in us loves spreading it with butter too. UGH so bad we know but so good.. how to resists! Well one way to eliminate having a plate full of bread is limiting the amount that’s available. Stick to just having fresh bread on the table and as it pains me to say this because I love white bread so much my husband  would be proud get whole wheat.

Trying to be healthy at family events can be hard. Often there is so much temptation, from the appetizers to dessert, usually the options aren’t so healthy, probably some cheesy apps with more bread and crackers.. that all taste really good of course! I mean a plate of just veggies and dip can be a little boring and no one wants to serve something that doesn’t taste good. This is the foodie in us talking.. We all know butter and cheese are the secret to making everything taste better. A good rule is to start off by eating healthy so when it comes time for dessert well you can have the bigger piece

wild rice stuffing

Ingredients

  • 3 cups wild rice cooked according to package
  • 2 cups mushroom broth
  • 1 tablespoon olive oil
  • 3 stalks celery chopped
  • 1/2 onion diced
  • 4 carrots chopped
  • 2 cloves of garlic minced
  • 1 1/2 cups mushrooms finely chopped
  • salt and pepper to taste
  • 1 cup gluten free breadcrumbs
  • fresh thyme
  • fresh sage cut into ribbons

Instructions

  • Cook rice according to package and substitute the water for mushroom broth
  • in a saucepan sautee onions, carrots and celery in olive oil until translucent about 5 minutes. add mushrooms, garlic and season with salt and pepper. Cook until browned. add fresh sage and thyme and cook an additional minute. Set aside
    Once rice is finished combine all the ingredients into a serving dish that’s oven safe.
  • In the same pan heat olive oil and cook sage until crisp about 1 minute, toss the breadcrumbs to toast slightly an additional minute. Place onto of rice and refrigerate if making ahead or serve immediately.
