In our household growing up our dad’s go-to recipe was lasagna. We have definitely eaten a lot of his lasagnas but never really cracked the code to his secret ingredients that made it so delicious. It’s a simple enough recipe to make and the ingredients are fairly easy to source that they are most likely already in your kitchen. That’s probably why we ate it so often! Everyone’s got 3-4 recipes they have mastered- well this was one of his! Ours is a little different however we guarantee it’s just as tasty (i’d say it was better!) what are the odds he sees this anyway..?
All the ingredients come together nicely in one pot. YEP! We love minimal clean up recipes like this one. Sometimes you just don’t want to have to wash a sink full of dishes… So cut the clean up and mess and give this recipe a go!
Once you’ve prepped all your ingredients in advance you just have to sit back and add them to the skillet one by one when it’s time. Than pour yourself something to drink because you deserve it and let the aromas fill your home. YUM! rich comforting food smells 🙂
Adding cinnamon to sauces especially tomato based is a must! It adds so much flavour and the smells are incredible. It is absolutely one of those secret ingredients you’d probably never think to add but once you’ve had a taste you can’t go back. Add a little more than what the recipe calls for if you love it like we do! Make sure to taste the sauce and adjust the seasoning to your liking.
one-pot skillet lasagna with lemon chive whipped ricotta ready in half the time of a traditional lasagna packed with all the same flavours and comforting spices.
6-8lasagna noodlesdepending on the size of your skillet (can be no boil but regular noodles will cook)
garnish with fresh parsleybasil, tomatoes, parmesan cheese, jalapeños
Instructions
Heat large skillet to medium and cook beef until browned, add onions until sautéed about 3-4 minutes and onions become translucent
Add garlic cloves and cook for 1 minute, add tomato paste, salt and pepper, oregano, chilli spice, nutmeg, cinnamon and stir 1 minute to allow the paste to absorb some of the seasonings
Add diced tomatoes, tomato sauce, jalapeños, and broth and bring to a boil, reduce to simmer once boiling
Add basil, red pepper flakes and spinach, and lemon juice stir to combine
Add lasagna noodles overtop of the sauce (break noodles to cover the entire surface) push down on the noodles to be covered in the sauce to allow the noodles to cook. Top with mozzarella and cover on low for 25 minutes
Meanwhile make the whipped ricotta, combine ricotta, chive, and lemon zest into a bowl and whisk until it becomes fluffy. 1 minute set aside and spoon overtop the lasagna once cooked
