Homemade Peach Refresher stirred together with iced tea lemonade and fresh peaches. Brewed black tea infused with hand squeezed lemonade all stirred together with a homemade peach purée and topped off with creamy coconut milk. This iced tea latte is super peachy, creamy and refreshingly cool for hot summer days.
To make the peach purée we used fresh peaches and added them to boiling water for just under a minute to loosen up the skins. After boiling the peaches quickly, transfer them to an ice bath to cool them down and halt the cooking process. This process is similar to blanching and the purpose of this step is to soften the peaches just a little as well as making it really easy to remove the skin. The soften peaches will be easier to blend into a smooth consistency and removing the skins will get rid of chunks and bits of skin that are tougher to blend.
From there, we just used our hands to remove the skin and cut the peaches into chunks and removed the pit. In the blender they go with natural sweetener. We used maple syrup but whatever sweetener you prefer to use can be added to the blender with the peaches. Blend until the mixture is nice and smooth. Chill the mixture while you prepare the tea and squeeze the lemons.
Steep the black tea with boiling water into a jug or pitcher large enough to add the squeezed lemon juice and peach purée. If you prefer to use green tea instead of black you can make the substitution here. While the tea is steeping, squeeze some lemons. This recipe calls for 3/4 cup of lemon juice and will serve 6 tall glasses. If you prefer less tart, reduce to 1/2 cup of lemon juice. To the tea, add the lemon juice and mix that together. The next step is to stir in the peach purée together with the tea lemonade. This will form the base of the drink and can be stored chilled without ice for 3-4 days. After that the lemon juice will loose it’s tartness and taste.
Fill a tall glass with ice and pour 3/4 of the way up the peach tea lemonade. Finish with coconut milk for a creamy iced tea latte beverage. Peachy, creamy lemon tea refresher completely homemade and the prettiest shade of tangerine.
