These are the simplest and easiest Peach Hand Pies and an absolute favorite for a last-minute dessert. Every bite is layered with fresh baked peaches, brown sugar oatmeal streusel, silky bourbon caramel and served with vanilla ice cream. Air-fried puff pastry with soft baked peaches and a crunchy topping sweetened with homemade caramel and served with a scoop of ice cream. These hand pies are super simple to make and great for a quick summer dessert.
We chose to make these hand pies fit for the air-fryer for a quicker cooking time that still gives you the buttery, flaky golden exterior and soft and juicy peach centre. We love how they turned out. Just 10 minutes in the air-fryer and they come out perfect. The only downside is having to do this in batches if your making more then 3 at a time because that’s all that fit in the basket. Extras, can be frozen and taken out for when you want to quickly cook a few little pies but they are great served warm or at room temperature.
Giving these hand pies a little southern flare by hitting them with some bourbon. Spiking the caramel for with a touch of bourbon for a classic pairing with peaches. To make the caramel we use granulated sugar and let that slowly cook down until it becomes a beautiful amber colour and becomes silky and smooth. It’s best to cook the sugar on low without stirring until it changes in colour. Once it transforms, we introduce a little bit of fat with the butter which helps thicken. Keep stirring and the heat on low. You want to add the cream in as slow as possible and continuously stir otherwise it can clump and crystalize some of the caramel. Keep watch over it and go nice and slow.
While the pies are cooking, make the brown sugar oatmeal streusel and the caramel. We decided to incorporate a little bit of crunch by baking up a super simple and quick streusel to give the pies more balance. Of course it’s optional, you could just sprinkle on more brown sugar in the end. It’s all simple but so delicious and everything works so well together. As soon as the pies are done in the air-fryer hit them with all the extra toppings and enjoy warm.
