These Watermelon Lemonade Popsicles are super fun and easy to prepare. Made with a freshly juiced batch of watermelon juice hand mixed with lemon and sweetened with a homemade mint syrup all poured overtop a creamy yogurt and mint layer. These pops have a fun creamy minty yogurt tip that bleeds into a refreshing sweet and tangy watermelon lemonade. Finish the pops off with a sprinkle of tajin for extra flavour.
Playing off our favorite summer drink- our signature Watermelon Lemonade. We’ve decided to turn it into a fun frozen treat by adding a creamy yogurt layer for some fun contrast and texture. It gives these pops a cool marble effect. Of course the greek yogurt can be substituted for coconut milk. We recommend adding a touch of vanilla or even maple syrup to help sweeten the yogurt tips to give them a little bit of taste as it is pretty neutral tasting. Adding it without anything would make it rather bland. Because it’s used for a sweet treat here, we find that it does need a bit of sweetness to counter the sharpness of the fresh lemon.
Another option would be to completely mix the yogurt layer in with the lemonade so that its all combined and turns a light shade of pink. That way you you’re left with a stronger tasting and looking yogurt treat. Because of the water content from the watermelon, it will separate just a little bit and turn to ice. These pops really do taste like lemonade once you start sucking on them and are meant to be enjoyed as an alternative to a refreshing glass of lemonade but serve in the form of a popsicle.
