Crispy coconut panko crusted shrimp patty with chunks of shrimp and hints of fresh ginger and lime topped with a mango coleslaw and served with a sweet & spicy chili mayo.

 

If you’re a fan of crispy coconut shrimp then your going to love these burgers! These shrimp burgers have chunks of shrimp packed into each bite with subtle hints of coconut, ginger, scallions and lime. We like serving the burgers with mango slaw into a buttery brioche bun smothered with chili mayo similar to a dipping sauce you would get when you order coconut shrimp.

 

 

Tips for making the shrimp burgers:

  • Use raw shrimp which helps the patties stick together. You can use pre-cooked shrimp but might have to add a bit of flour and panko into the mixture before forming the patties to make sure everything binds together.
  • Freeze the patties for 15 minutes before coating and frying. This will ensure they stay firm and hold together when frying.
  • Once the patties are frying, leave them be. Do not touch them or flip until you see a nice golden crust starting to form on the sides otherwise they will fall apart.

 

How to serve:

You can serve these burgers with simple toppings like lettuce, red onions and mayo. All the flavor comes from the delicious crispy shrimp patty and they will taste amazing regardless. We decided to make a quick mango coleslaw which is just chopped mango with a store bought already chopped coleslaw and then tossed everything in lime juice, salt, pepper, honey and cilantro. For the chili mayo we simply mixed mayo with lime juice, sriracha, old day, garlic chili paste and sweet chili sauce.

COCONUT SHRIMP BURGER

Ingredients

  • 1 lbs peeled and deveined raw shrimp
  • 1 tsp lime zest
  • 1 tsp lime juice
  • 1 tbsp fresh chopped cilantro
  • 2 tbsp chopped scallions
  • 1 tsp freshly grated ginger
  • 1 tsp old bay seasoning
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 3 cloves of garlic minced
  • 1 egg white
  • Toasted brioche buns
  • Panko breading:
  • 1 tsp white pepper
  • 1 tsp salt
  • ½ cup seasoned panko breadcrumbs
  • ½ cup flour
  • 1/3 cup unsweetened shredded coconut
  • 2 eggs beaten
  • Mango Slaw:
  • 1 bag of coleslaw
  • 1 mango peeled and chopped
  • Juice from 1 lime
  • Salt & pepper to taste
  • ½ tbsp honey
  • Chili mayo:
  • ½ cup mayo
  • Juice from half a lime
  • 1 tsp sriracha
  • 1 tsp garlic powder
  • 1 tsp garlic chili paste
  • 1 tsp sweet chili sauce

Instructions

  • 1. Add half the shrimp to a food processor and pulse until chopped. Chop the remaining shrimp into chunks. Add the shrimp to a bowl along with lime zest, lime juice, cilantro, scallions, garlic, ginger, old bay, salt, pepper, onion powder and egg white. Mix everything together and form into equal size patties. Cover and freeze for 15 minutes. If the patties aren’t forming you can add a bit of flour and panko this will help form your patties.
  • 2. To make the slaw, add all ingredients to bowl and mix together.
  • 3. To make the chili mayo add all ingredients to a bowl and mix together
  • 4. For the breading station, in a small bowl combine flour and salt & pepper. In a separate bowl combine panko and coconut and in a third bowl add the beaten eggs.
  • 5. Start by lightly coating the patties in flour then dip into the egg wash and dredge in panko using your hands to press the panko onto the patties to make sure they are completely coated.
  • 6. Heat 1/3 cup canola or vegetable oil in a skillet over medium high heat. Fry the shrimp patties about 3-4 minutes per side until golden brown and crispy. Place on a paper towel to get rid of excess oil
  • 7. To assemble your burgers, spoon mayo onto brioche buns, next add the shrimp patty and top with mango slaw.
  • Serve immediately.
