One-pot chorizo spiced sausage and cheese tortellini soup made with spinach and zucchini that’s ready in 30 minutes. The perfect wholesome soup that’s comforting and full of flavour.
This soup comes together all in one-pot and prepared on the stove for an easy meal that’s ready in 30 minutes. A mix of onions, zucchini, crumbled chorizo, and cheese tortellinis make up the main components of the soup. Thicken the soup up with some tomato paste, broth, and dash of red wine and let the simmering magic do it’s thing!
Each bowl is topped with fresh shaved parmesan chunks and a dash of red chili flakes for a touch more of spice. Serve each bowl with a fresh toasted baguette for dipping.
want to make this soup completely vegetarian?!? Absolutely! This soup is so versatile that just about any vegetables would taste great if you were to add it to the soup. Simply replace the heat you would get from chorizo sausages with extra spices. Dried oregano, thyme, paprika, and red chili flakes would make a great addition. Add them in when sautéing the onions and zucchini and taste and adjust the seasoning once the soup has finished simmering.

Ingredients
1medium white onionchopped
1large shallotdiced
2chorizo sausage linksremoved from casing
4clovesgarlicminced
1large zucchinichopped into bite sized pieces
2TBSbutter
2TBStomato paste
1/4cupred wine
4 1/2cupvegetable brothsub beef broth if preferred
1package frozen cheese tortellini
2cupspinachloosely packed
1/4cupheavy cream
shaved parmesan for serving
red chili flakes for garnish
Instructions
In a dutch oven or large soup pot, melt butter over medium heat. Sauté onions for 3 minutes until starting to turn translucent. Add the chopped zucchini , season with a bit of salt and pepper and cook an additional minute. Stir in the sausages, garlic, and shallots and continue to cook until the sausage begins to brown. Add the tomato paste and red wine cooking to reduce for 2 minutes.
Slowly pour in the broth followed by the tortellinis. Cover and reduce to simmer for 10 minutes. Cook until the tortellinis are tender.
Once the tortellinis are cook, turn the heat off and pour in a small amount of cream with the spinach. Mix to combine and allow the heat of the soup to cook the spinach until wilted.
Serve each bowl with some shaved parmesan and a dash of red chili flakes.
