This apple cider spritz is a fall take on the classic aperol spritz. Apple cider, prosecco and aperol come together in this refreshing cocktail that’s spiced with a homemade cinnamon and thyme simple syrup.

If you enjoy your Aperol Spritz’s in the summertime just as much as we do this is the perfect drink for you! And if some of you are wondering what Fall taste like in a glass.. well it probably taste a little something like this.

This is going to be your new favourite! It’s the perfect summer ending cocktail that you can carry into Fall. This drink is refreshingly bubbly with the addition of a cinnamon thyme syrup for a touch of warmth and spice and the comforting taste of apple cider. What’s great about this is that it’s also embarrassingly easy. You can build everything directly into your glass which makes it easy for entertaining and it can work great for a self-service station.

Making a simple syrup is easy. All you need to do is bring sugar and water to a boil, let it simmer and voila you’ve got a beautiful syrup in no time. The best thing about making it yourself is that you can customize it however you like by throwing in fresh herbs, floral, spices, teas or whatever and it becomes something completely different. We love making our own because it adds a unique twist to just about any cocktail.

Ingredients

  • per 1 cocktail
  • 3 oz. fresh apple cider
  • 1 oz. Aperol
  • 0.25 oz cinnamon thyme syrup
  • 2-3 oz. champagne
  • 1 oz. soda
  • garnish; apple slices thyme sprig, cinnamon stick
  • Cinnamon thyme syrup
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • handful thyme sprigs
  • 1 TBS cinnamon

Instructions

  • Fill a glass with ice. Add the ingredients as listed in order.
  • Serve immediately.

Notes

To make the syrup: Bring sugar and water to a slow boil. When boiling, add the thyme and cinnamon, stir to combine and let simmer on low to thicken for 10 minutes. Transfer to a glass jar and allow to cool completely before serving. Store in a glass jar with a lid up to 1 week in the refrigerator.
For a smokey flavour or if you have older thyme, you can torch it quickly and let it catch fire and burn a few seconds. Add it to the syrup when simmering or use it to smoke your cocktail glass.
