Chimichurri is this delicious Argentinian green sauce usually served with meat and is made from fresh herbs like parsley, garlic, red wine vinegar and red onions. We added a jalapeno for a hint of spice. The flavors go so well with red meat and the burgers are perfect for any summer BBQ you might be hosting! Your guest will love this delicious twist on a classic burger.
The burger patty recipe is fairly easy. No need to go overboard on the seasoning since we’ll be topping the burgers with chimichurri which packs a punch of flavor on its own. We opted for medium to lean ground beef. When you’re making burgers from scratch you need a bit of fat from the meat, that’s where the juices come from. You don’t want to use extra lean meat, the burgers will end up being dry. We recommend making the patties a few hours before cooking that way they won’t break a part on the grill.
We added some smashed avocados to the bottom bun, it just adds that extra hint of freshness and adds a nice layer of creaminess to each bite.
To finish the burgers we melted some white cheddar and topped them off with fried onions! I don’t know about you guys but I love fried onions on my burgers. I always make extra and pile the onions high on top. They just add caramelization the each bite and I love it!

Ingredients
Burger patties
1lbsground beefmedium to lean meat more or less depending on how many patties you need to make.
1egg
2teaspoonswhite pepper
2teaspoonsblack pepper
1/3cupseasoned panko breadcrumbs
2teaspoonsslat
2garlic cloves minced
Chimichurri
½cupfresh parsley
¼cupfresh cilantro
1tablespoonred wine vinegar
3clovesof garlic
¼cupred onion
½jalepenoseeds removed
¼cupolive oil
Salt & pepper to taste
Burgers:
2-3avocadossmashed
1onionthinly sliced
1tablespoonolive oil
6slicesof white cheddar

Instructions
To make the patties: (We recommend making these a few hours in advance or the day before)
1. Add all ingredients to a bowl, using your hands mix everything together but do not overmix. Grab a handful of the mixture and roll it into a small using your palms until smooth. Press down onto the ball and form a patty, about ½ inch thick. Refrigerate until ready to grill.
To make the Chimichurri:
2. Add all ingredients to a food processor and gently pulse until everything is finely minced and combined. If its to thick, add more red wine vinegar or olive oil. (Try not to go heavy on the red wine vinegar) Pour into a bowl until its time to assemble burgers
To make the burgers:
3. Heat olive into a frying pan. Fry the onions stirring occasionally for about 10-15 minutes.
4. Spray the grill with cooking spray and heat to medium high heat. Once the grill is hot cook the burger patties for about 3-4 minutes per side. Once the burger is almost done place a slice of white cheddar onto the patties. Melt the cheese and remove the burgers from the grill.
5. To assemble the burgers, place smashed avocados onto bottom bun, next place the patty on top, spread chimichurri over top and garnish with grill onions.
