Toasted caprese sandwiches layered with pesto, arugula, fresh mozzarella, tomato, avocado, basil and finished with a quick balsamic mayo.
There’s nothing like a super simple sandwich that’s easy to assemble for a complete and satisfying lunch.
Caprese salads are well known and popular during the summer time to make use of garden herbs and tomatoes. Adding pesto into the mix and turning it into a sandwich has also been a hit combination over the years as a fresh and delicious vegetarian option.
Come summer, you can bet that we will be diggin in to many of these. What makes these sandwiches slightly different is the addition of the balsamic mayo. We can’t quite remember where we first got hold of it but it just seems like its made for this type of sandwich.
For a more filling lunch we recommend making a little side salad to accompany the sandwiches with the remaining ingredients you don’t use. Simple serve it with a little olive oil, fresh pepper and lemon juice.
