A simplified pie that doesn’t require any special baking skills! No need to worry about the perfectly folded edges gently pressed into the pan and those accidental slip ups creating cracks. Galette’s are a quick alternative with almost identical taste and texture.
There is no such thing as a perfect galette which is why making them is so attractive. It is a freeform dessert that’s made to look rustic. This is what we like to call simplified baking. Meaning minimal effort, few ingredients and not a lot of instructions leaving you with little mess to clean up. If only most baking could be this easy! We are not the type that like to follow exact measurements and instructions when cooking which is generally what baking is. Don’t get us wrong we love our desserts but would much rather eye ball our ingredients and apply the taste and adjust methods. When it comes to making desserts we prefer simplicity and on occasion take the time to make something that requires a bit more effort and time.
Galettes can be very broad ranging from savoury to sweet. The filling is placed directly on top of the rolled out pastry with the edges folded up and around the filling. The tart becomes crisp during baking for a beautiful golden edge. The dough is really easy and quick to make. Everything is combined in a food processor by adding a bit of cold water to bind it all together the dough is ready in just a few minutes.
We opted for a plum tart here mostly because we love the deep purple of the plums skins but you could easily use an alternative combination of fruits if you prefer. Served warm or chilled it’s a great way to use up excess fruit in your kitchen. Dress it up with whipped cream or cream fraiche and a light drizzle of honey for a touch of sweetness.
