This recipe was inspired by my trip to Australia, they serve homemade baked granola almost everywhere and typically use macadamia oil for most of their cooking. Macadamia oil is very hard to find around here so instead I incorporated some toasted macadamia nuts which make for a sweet, crunchy and delicious granola.

This gourmet granola is preservative free, vegan, gluten-free and refined sugar-free. The rich crunchy texture of wholesome oats, bran, natural currants and sultanas along with succulent cranberries that are rich in antioxidants, combined with macadamia nuts, coconut oil and honey make for the perfect combination to serve alongside your morning yogurt or afternoon snack.

TOASTED MACADAMIA GRANOLA WITH CRANBERRIES AND GOLDEN RAISINS

Super easy homemade toasted granola that is sweet, crunchy and delicious, rich in texture and full nutrients. oil only takes 10 minutes cooking time. It is the perfect granola to make ahead and enjoy throughout the week, or make a double batch and freeze some for later.

Ingredients

  • 2 1/2 cups gluten-free rolled oats or regular rolled oats
  • 1 cup macadamia nuts
  • 1/2 tsp ground cinnamon
  • 1 tbsp chia seeds
  • ½ cup oat bran
  • ½ cup cranberries
  • 1/3 cup of sultanas golden raisin
  • 1/3 cup of currants
  • 1/3 cup of pumpkin seeds
  • 1/2 tsp salt
  • 1/2 cup honey or pure maple syrup
  • 1/4 cup melted coconut oil
  • 2 tsp vanilla extract

Instructions

  • Preheat oven to 350F
  • Coarsely chop the macadamias, and pop into the bowl
  • Add in the oats, oat bran, chia seeds, pumpkin seeds, cinnamon and salt
  • In a small bowl, whisk the honey, coconut oil and vanilla together (if the honey isn’t runny enough, you may have to warm in a small saucepan, or pop into the microwave for 40 seconds)
  • Pour the honey mixture over the oats, and mix well until everything is coated
  • Pour the oat mixture onto a parchment lined baking sheet and spread out evenly
  • Pop into the oven and bake for 10 minutes, stir and return to the oven for another 5 minutes
  • Remove from the oven and toss in the dried fruits (if using) while the granola is still warm. The granola will dry out and crisp up while it cools. Store in an air-tight container until ready to use or freeze
