HONEY & THYME ROASTED CARROTS
This is an extremely easy side dish to prepare and one you can throw together in under 5 minutes. Roasted vegetables are our favorite way to eat veggies. The honey & thyme brings outs the natural sweetness of carrots and they are caramelized to perfection.

- 10-12 whole carrots
- 2 tbsp fresh thyme
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tsp sea salt
- 1 tsp fresh ground pepper
Preheat oven to 400 degrees.
Cover a sheet pan with aluminum foil or parchment paper.
Drizzle olive oil & honey over carrots on the sheet pan. Season with salt and ground black pepper. Toss carrots until evenly coated with oil and seasonings. Arrange carrots on sheet pan.
Toss fresh thyme leaves over carrots.
Roast in oven for 30-35 minutes, until golden and tender.
Garnish the dish with fresh thyme, fresh ground pepper and other fresh herbs if you’d like –Rosemary or Parsley
