Fennel Sausage Sheet Pan Pizza
Fresh pizza dough topped with a simple red sauce, shredded mozzarella, Calabrian chiles and scratch made fennel sausage finished with basil leaves.

- 1 pizza dough ball homemade or store bought
- 1/3 cup crushed tomatoes
- kosher salt to season
- black pepper to season
- 1 tsp dried oregano
- 1 cup fresh mozzarella ball shredded
- fresh basil garnish
- Calabrian chiles optional
Fennel Sausage
- 350-400g ground pork
- 2 tbsp fennel seed
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 1/2-2oz red wine
fennel sausage: Combine all the ingredients in a bowl and mix well using your hands. Cover and let rest refrigerated for at least 20 minutes to allow the flavours to develop and mix together.
Preheat the oven to 500 degrees F.
Dust a sheet pan with some cornmeal or semolina to avoid the dough from sticking. Stretch out or roll your pizza dough thinly to fit the sheet pan.
Spread the crushed tomatoes across the dough to create a thin sauce. Next, spread the shredded mozzarella, then layer the fennel sausage, use a small spoon to form dollops and layer it across the pizza, finish with a few Calabrian chiles and bake for 10 minutes or until the crust is golden and the cheese is melted. Serve with fresh basil and enjoy!
