Fennel Sausage Sheet Pan Pizza

Fresh pizza dough topped with a simple red sauce, shredded mozzarella, Calabrian chiles and scratch made fennel sausage finished with basil leaves.

  • 1 pizza dough ball homemade or store bought
  • 1/3 cup crushed tomatoes
  • kosher salt to season
  • black pepper to season
  • 1 tsp dried oregano
  • 1 cup fresh mozzarella ball shredded
  • fresh basil garnish
  • Calabrian chiles optional

Fennel Sausage

  • 350-400g ground pork
  • 2 tbsp fennel seed
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 1/2-2oz red wine


  • fennel sausage: Combine all the ingredients in a bowl and mix well using your hands. Cover and let rest refrigerated for at least 20 minutes to allow the flavours to develop and mix together.
  • Preheat the oven to 500 degrees F.
  • Dust a sheet pan with some cornmeal or semolina to avoid the dough from sticking. Stretch out or roll your pizza dough thinly to fit the sheet pan.
  • Spread the crushed tomatoes across the dough to create a thin sauce. Next, spread the shredded mozzarella, then layer the fennel sausage, use a small spoon to form dollops and layer it across the pizza, finish with a few Calabrian chiles and bake for 10 minutes or until the crust is golden and the cheese is melted. Serve with fresh basil and enjoy!
