S'mores Cookie Pie
Smore's cookie pies made with a chocolate chip cookie base loaded with extra milk chocolate, graham crackers, and a gooey marshmallow centre.
- 1/2 cup unsalted butter
- 1 cup light brown sugar packed
- 1/4 cup granulated white sugar
- 2 eggs room temperature
- 1 tsp vanilla extract
- pinch of salt
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 2 Hershey's milk chocolate bar
- 1 cup crushed graham crackers
- 10 medium sized marhmallows
Combine butter and sugar in the bowl of a stand mixer. Mix until just combined. Add eggs one at a time with vanilla and mix well.
Combine flour, salt, and baking soda. Slowly add the dry ingredients into the the wet mixture. Mix until just combined.
Chop 1 1/2 Hershey's chocolate bars and crush the graham crackers. Fold into the mixture.
Scoop 2 cookie balls into each tin and spread across the base and up the edges to form a cavity. Place 2 marshmallows in the centre and cover with a third cookie scoop. Press down with your hand to cover the marshmallow. Chill for 30 minutes.
Preheat the oven to 350 degrees F.
Bake the cookie pies for 15 minutes or until golden and the marshmallow centre begins to ooze out. Remove from the oven and let rest for 5 minutes.
