Handmade Salmon Burgers with Orange Basil Mayo

This Handmade Salmon Burger with Orange Basil Mayo sings a perfect harmony of flavors! It’s a gourmet masterpiece that’ll make your taste buds sing. Start off by making a thin ground salmon patty seasoned with old bay seasoning and old fashioned mustard shaped and chilled to set.  Pan-fried until golden and topped with melted Havarti cheese. Serve each patty on a toasted brioche bun with a zesty and herby orange basil mayonnaise, crispy lettuce, and pickled red onions. This dish is quick to make, and perfect for summer.

Ingredients

  • 6-8 oz salmon fillet skinless
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp Old Bay Seasoning
  • 1 tbsp old fashioned mustard
  • salt and pepper to taste
  • 1/2 lemon juiced

Orange Basil Mayo

  • 1/2 cup mayonnaise
  • 1/3 cup orange juiced
  • 1 tbsp orange zest
  • 2 cloves garlic
  • large handful of fresh basil
  • pinch of salt and pepper

Serving

  • brioche bun
  • pickled red onions
  • pickles or cucumber slices
  • fresh or pickled jalapenos
  • Havarti cheese
  • lettuce

Instructions

  • In the bowl of a food processor combine cubed salmon, spices, mustard, and season with salt and pepper. Pulse until just combine a few seconds. Divide evenly into 4 and shape into patties. Refrigerate for at least 20 minutes to allow the patties to settle and maintain their shape.
  • Orange Basil mayo: combine all the ingredients into a blender or food processor and blend until well combined. Keep refrigerated until ready to use.
  • On a hot griddle or cast iron skillet, cook the salmon patties with a touch of oil. Allow to cook a few minutes uninterrupted before flipping over. Once the edges begin to turn a golden color, flip and cook for 4-5 minutes. During the final minute of cooking top with a slice of Havarti cheese.
  • To serve: on a toasted brioche spread the orange basil mayo, layer with crispy lettuce leaves, top with the salmon burger and garnish as desired.
