Handmade Salmon Burgers with Orange Basil Mayo

- 6-8 oz salmon fillet skinless
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp Old Bay Seasoning
- 1 tbsp old fashioned mustard
- salt and pepper to taste
- 1/2 lemon juiced
Orange Basil Mayo
- 1/2 cup mayonnaise
- 1/3 cup orange juiced
- 1 tbsp orange zest
- 2 cloves garlic
- large handful of fresh basil
- pinch of salt and pepper
Serving
- brioche bun
- pickled red onions
- pickles or cucumber slices
- fresh or pickled jalapenos
- Havarti cheese
- lettuce
In the bowl of a food processor combine cubed salmon, spices, mustard, and season with salt and pepper. Pulse until just combine a few seconds. Divide evenly into 4 and shape into patties. Refrigerate for at least 20 minutes to allow the patties to settle and maintain their shape.
Orange Basil mayo: combine all the ingredients into a blender or food processor and blend until well combined. Keep refrigerated until ready to use.
On a hot griddle or cast iron skillet, cook the salmon patties with a touch of oil. Allow to cook a few minutes uninterrupted before flipping over. Once the edges begin to turn a golden color, flip and cook for 4-5 minutes. During the final minute of cooking top with a slice of Havarti cheese.
To serve: on a toasted brioche spread the orange basil mayo, layer with crispy lettuce leaves, top with the salmon burger and garnish as desired.
