French Onion Soup

One-pot French onion soup that's rich and comforting, full of herb aromas and sweet caramelized onions bubbling with melted gruyere cheese and softened baguette pieces.

Ingredients

  • 5 medium yellow onions thinly sliced
  • 1/4 cup unsalted butter
  • 1/3 cup white wine
  • 4 cups beef broth
  • 1 TBS better than bouillon
  • 2 cups water
  • herb bouquet oregano and thyme
  • 2 bay leaves
  • salt and pepper to taste
  • French baguette
  • block of gruyere cheese

Instructions

  • 1. Melt butter in a Dutch oven or large soup pot. Add the onions and cook on low for 1 hour, stirring frequently until caramelized. Onions should be a deep gold and jammy.
  • 2. Bring the heat to medium and deglaze the onions with the white wine. Scraping the browned bits at the bottom while the wine cooks down just a bit.
  • 3. Stir in the broth, bouillon, herb bouquet and water. Bring the mixture to a boil and reduce to simmer 10 minutes, covered. Taste and season with salt and pepper if needed.
  • 4. Transfer soup to oven safe bowls, top with two pieces of baguette and cover completely with shredded gruyere. Broil in oven until cheese is melted and bubbling. Garnish with extra thyme. Enjoy!
