pour orange juice into ice cube tray and freeze for 20 minutes or until firm. Remove from the tray, transfer into ziplock bag and crush with a mallet until it resembles crushed ice. Set aside. or return to freezer until ready to use.
In a glass, pour 2 oz of Aperol, followed by 1 oz of lemon juice. Fill glass with crushed ice. Pour sparkling wine or champagne overtop.
Garnish with crushed shaved orange juice ice. and enjoy!
