loaded beef taco dorito nachos

Cheesy taco seasoned ground beef layered with extra cheese, jalapenos, cilantro, onions, tomatoes and a healthy drizzle of sour cream piled over cheesy Doritos makes these nachos extra crave worthy.

Ingredients

  • 1 lb ground beef
  • 1/2 yellow onion finely chopped
  • 1 tbsp chipotle chili powder
  • 1 tbsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup pickled jalapenos
  • 1 tbsp tomato paste
  • 1/3 cup water
  • 2 cups mexican cheese blend shredded
  • Doritos family size bag

toppings

  • cilantro finely chopped
  • tomato diced
  • white onion finely chopped
  • pickled jalapenos
  • scallions chopped

Instructions

  • preheat the oven to 400 degrees F
  • in a large pan, sautée ground beef over high heat and add the onion. Cook breaking up the meat into small chunks as it cooks until browned. About 6 minutes.
  • Season the beef with the spices, add the jalapenos and tomato paste. Stir until combined. Add the water and reduce the heat to simmer until thickened into a sauce. About 10 minutes. Stir in 1/2 cup of the cheese until melted and remove from heat.
  • To assemble the nachos: layer half the chips on a parchment lined baking sheet. Spread half the beef across the chips and add half the remaining cheese overtop. Build a second layer overtop with the chips, rest of beef and cheese. Transfer to the oven and bake until the cheese has melted.
  • To serve: top with tomatoes, jalapenos, sour cream, onion and cilantro. Enjoy!
