- 2 1/2 tsp granulated sugar
- 1 package rapid rise yeast
- 5 cups 00 flour or all-purpose
- 1 TBS salt
- 2 1/2 tsp olive oil
- 1 28 oz can crushed tomatoes
- 1 1/2 TBS tomato paste
- 1/2 tsp salt
- 1/2 tsp sugar
- 1 TBS dried oregano
- 1 tsp olive oil
- 1 tsp garlic powder or 1 grated garlic clove
- 4 thin pineapple wheels
- 6-8 thin slices of ham
- 1 cup shredded pizza mozzarella
- jalapenos thinly sliced into rounds
To make the dough: mix together the water, sugar and yeast. Let stand 5 minutes. In the bowl of a stand mixer, combine, flour, salt, and olive oil. Make a well in the centre and pour in the yeast minutes. Mix over medium speed using the dough hook until it starts to form a ball and comes together. Once the dough forms into a ball, divide in 2 and place in 2 separate oiled bowls. Cover with cling wrap and damp kitchen towel. Place in a warm area and allow to rise for 1 hour.
Preheat the oven to 500 degrees F 1 hour before cooking pizza.
Once the dough has doubled in size, transfer to a lightly floured surface. Stretch it out using your hands and knuckles into a large rectangle. Lightly dust a sheet pan with a touch of cornmeal or semolina to prevent from sticking. Place the pizza dough into the sheet pan and gently press it to the edges using your fingers.
To make the tomato sauce: combine crushed tomatoes, tomato paste, sugar, salt, oil, oregano and garlic together. Spread a few spoonful's of sauce across the dough and spreading into a thin layer. Top with shredded mozzarella, pineapple rounds, ham and jalapenos. Bake for 6 minutes until the cheese is nicely melted. If you prefer crispy ham, broil for 1-2 minutes. Enjoy!
