- 1 lb minced beef
- 2 TBS olive oil
- 1 medium white onion roughly chopped
- 1 TBS ginger thinly sliced
- 1 TBS ginger garlic and chili paste, substitute bird's eye chilies + minced garlic
- 1 cup broccoli cut into florets + stem
- 1/2 cup sweet peppers or bell pepper julienned
- 4 spring onions finely diced
- 1 TBS brown sugar
- 1 TBS oyster sauce
- 2 TBS soy sauce
- 1 TBS dark soy sauce
- fresh basil to serve
To make the stir-fry sauce, mix together the brown sugar, oyster sauce and both soy sauces. Set aside.
Bring a large pot of water to a boil. Once the water is boiling cook the noodles according to package directions.
Heat oil in a wok or large frying pan over high heat. Add the ginger cooking for a few seconds. Add the minced beef and stir-fry breaking apart as it cooks for 4 minutes. When half the meat is browned but still pink, add the onions and continue to stir and cook until softened. Mix in the vegetables and continue to stir-fry on high until they begin to brown and crisp a little.
Once the noodles are cooked, pull them out of the water and toss them directly into the stir-fry. If your noodles are done well before you are ready to add them in with the meat and vegetables, you can drain them and set them aside.
Once the noodles are in the stir-fry, pour the sauce overtop and toss to combine. Remove from the heat and top each bowl with fresh basil and spring onions. Enjoy!
