Fish and Chip Sandwich

Perfectly-crisp, golden-brown fried fish topped with crispy waffle fries served with a tangy tartare sauce served in a toasted bun.

Ingredients

  • 2 4 ounce filets of boneless skinless cod, cut in half
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • 4 oz club soda whole can if not using beer, cold
  • 3/4 355 ml can of beer (light beer such as lager), cold
  • Vegetable oil for frying
  • 4 sesame buns
  • 1 pkg of frozen waffle fries (substitute regular fries)
  • tartare sauce
  • buttered pickles

Instructions

  • 1. Cook waffle fries according to package directions. If making regular fries or homemade fries you'll want to preheat the oven and cook the fries before getting everything else ready.
  • 2. Once the fries are in the oven, prepare the batter. In a bowl combine flour, cornstarch, baking powder, salt and pepper. Stir until just combined. Mix in the club soda and stir to combine. Finish by whisking in the beer until smooth and a pancake like batter forms. Some lumps are okay. Keep refrigerated until ready to use.
  • 3. Heat the vegetable oil for frying to 375 degrees F. Once the oil is hot, prepare the fish. Dredge each piece of fish through the batter and place directly into the hot oil. Cook until crispy and golden about 3-5 minutes. Remove from the heat and set on paper towel. After 1 minute transfer to a wire rack to allow proper air flow. Repeat until all the fish is cooked.
  • 4. Brush the inside of the buns with some melted butter and broil in the oven for 30 seconds to 1 minute until just toasted. Spread tartare sauce on top and bottom, layer 4-5 buttered pickles on the bottom half, top with fried fish and some fries.
  • 5. Serve immediately!
