Cut avocadoes into french fries. Carefully remove the peel, half each avocado and remove the pit. Slice each half into 5 fries.
Combine flour, cornstarch, spices and salt and pepper into a bowl. Add breadcrumbs to a separate bowl. Slowly pour the soda water into the flour mixture to create a thick batter. Whisk until smooth and no clumps. Mixture should ressemble thick pancake mix. Add a touch of water if needed to smooth it out.
To dredge, start by dipping each avocado fry into the wet batter and coat both sides into the breadcrumbs. Repeat until all the fries are done.
Heat vegetable oil to 350 degrees. Once hot, carefully drop fries careful not to overcrowd. Cook 1 minute per side or until golden, flipping. Do in batches until all the fries are done.
Mix together the salsa verde with the creamy garlic dip.
To serve: serve avocado fries with creamy garlic salsa verde dip, drizzle with spicy mayo, garnish with fresh chives. Enjoy!
