- Rye bread or Sourdough bread sliced
- 2-3 Fuyu persimmons ripened and cut into slices
- 1 cup ricotta
- ¼ cup blue cheese
- Honey
- Pumpkin seeds
- Fresh thyme
1. In a food processor, whip the ricotta and blue cheese until creamy and smooth -about 1-2 minutes
2. Toast the bread
3. Spread the whipped ricotta blue cheese over the toast
4. Top with sliced persimmons, pumpkin seeds, fresh thyme and a drizzle of honey
