maple cinnamon roasted pears with whipped mascarpone

Simple yet elegant baked pears drizzled with maple syrup and sprinkled with cinnamon, sugar, ginger and nutmeg. Serve them with an easy vanilla whipped mascarpone for a tasty dessert.

Ingredients

  • 4 Anjou or Bosc pears halved and core removed
  • 3 TBS maple syrup
  • 1 TBS cinnamon
  • 1 TBS brown sugar
  • 1 tsp ground ginger
  • 1 tsp ground nutmeg more for garnish
  • 5 TBS mascarpone
  • 1 TBS vanilla
  • crushed walnuts for garnish

Instructions

  • 1. Preheat oven to 350 degrees F. Line a baking tray with parchment. Wash pears and remove the core using a spoon or melon baller. Remove enough for 2 TBS of filling.
  • 2. Place pears on baking tray. Drizzle overtop each pear the maple syrup. Dust with spices and bake for 30 minutes.
  • 3. During the final stages of cooking whip the mascarpone. Add to a food processor or blender and blend for 1-2 minutes until it begins to resemble whipped cream. Add the vanilla and blend for an additional minute. For a stronger vanilla taste add more.
  • 4. To serve: dollop each pear with 2 TBS of whipped mascarpone, top with crushed walnuts and additional cinnamon or nutmeg if desired. Serve immediately.
