NO CHURN BLUEBERRY ACAI SORBET
An easy no-churn blueberry acai sorbet great for dessert and even better for breakfast in a smoothie bowl! A simple fresh summer treat with a hint of lemon.

- 1 cup frozen blueberries
- 1/4 cup corn syrup
- 1/3 cup of water –use only to loosen ingredients in food processor if necessary
- 4 packets frozen açai puree slightly thawed
- Juices from 1 lemon
- ½ tablespoon lemon zest
1. Add the slightly thawed acai packets, frozen blueberries, corn syrup, lemon zest and lemon juice to the food processor.
2. Process the mixture until the blueberries become crumbly, pressing down the mixture with a spatula as needed. Add the 1/3 cup of water if you’re having trouble blending. If the mixture is blending smoothly leave water out.
3. Continue to process until the mixture becomes smooth and evenly processed.
4. Once everything is smooth, taste for sweetness, and add additional corn syrup or honey as needed.
5. You can serve this sorbet immediately or transfer it to an air-tight container and freeze for a couple hours for a harder consistency.
