Ingredients

  • 1 cup frozen blueberries
  • 1/4 cup corn syrup
  • 1/3 cup of water –use only to loosen ingredients in food processor if necessary
  • 4 packets frozen açai puree slightly thawed
  • Juices from 1 lemon
  • ½ tablespoon lemon zest

Instructions

  • 1. Add the slightly thawed acai packets, frozen blueberries, corn syrup, lemon zest and lemon juice to the food processor.
  • 2. Process the mixture until the blueberries become crumbly, pressing down the mixture with a spatula as needed. Add the 1/3 cup of water if you’re having trouble blending. If the mixture is blending smoothly leave water out.
  • 3. Continue to process until the mixture becomes smooth and evenly processed.
  • 4. Once everything is smooth, taste for sweetness, and add additional corn syrup or honey as needed.
  • 5. You can serve this sorbet immediately or transfer it to an air-tight container and freeze for a couple hours for a harder consistency.
