roasted salmon with honey jalapenos potatoes
Easy oven-baked salmon topped with fresh basil oil served alongside baby potatoes roasted in honey and jalapenos.

- 1 lb baby potatoes cut in halves
- 4 TBS olive oil
- 2 TBS honey
- ½ jalapeno cut into thin rings
- 1 lb salmon cut into fillets
- 1 blood orange thinly sliced
- 1 TBS basil finely chopped
- Salt and pepper
- optional: serve with a side of vegetables or rice for a more complete meal
1. Preheat oven to 425 degrees F. Combine 2 tablespoons of oil, honey, and jalapeno slices in a bowl and mix to combine, On a baking sheet or oven safe dish toss the potatoes with the mixture until evenly distributed and season with salt and pepper. Roast for 20 minutes.
2. Meanwhile, to make the salmon: rub each fillet with a bit of olive oil, season with salt and pepper and top with orange wheels. Once the potatoes have cooked for 20 minutes, remove the pan from the oven and push them to the side making space for the salmon. Be sure to flip the potatoes at this point. Arrange the fillets in a single layer around the pan. Roast for 20 minutes until the salmon is light pink and tender to the touch.
3. To make the basil oil: combine chopped basil and remaining olive oil in a small bowl. Set aside and drizzle overtop the salmon once ready to serve.
