chai spiced galette on a homemade dough topped with creme fraiche and a drizzle of honey

- For the dough
- 1/2 cup unsalted butter chilled
- 1 1/2 cup pastry flour regular all purpose is fine
- 1 tsp sugar
- pinch of salt
- 1 egg
- 2 tablespoons ice water
- For the filling
- 6 plums cut in half and thinly sliced
- 1 tsp cinnamon
- 1 tsp ginger
- 1 tsp nutmeg
- 1 tsp cardamon
- 1 tsp clove
- 1 tsp all spice
- honey
- 1 egg yolk
- creme fraiche or whipped cream
- pistachios fresh thyme for garnish
Begin by making the crust. Combine the butter and flour in a food processor and mix until it starts to crumble. Add the egg, salt and sugar and combine. Slowly add the water blend until the mixture starts to combine and clumps together
Kneed the dough with your hands and roll out onto parchment paper with a bit of flower shaping the dough into a circle or a rectangle depending on your preference. Should be about 1/4 of an inch. Refrigerate for 20 minutes.
When the dough has cooled, preheat the oven to 400 degrees F. place sliced plums directly onto the dough and sprinkle with seasoning and honey. brush the outside of the dough in egg wash and bake for 30 minutes until the crust turns golden brown
serve with creme and pistachios
