Gochujang spiced salmon bites with broccoli and green beans

Soy marinated salmon bites oven baked until crispy and tender served with sweet and spicy gochujang broccoli and green beans.

Ingredients

  • 1- 1 1/2 lbs salmon, skin removed
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp gochujang
  • 1 tbsp sesame oil
  • 1 tsp fish sauce
  • 1 tbsp orange juice
  • kosher salt and pepper to season

  • 1/2 pound green beans, trimmed
  • 1/2 pound broccoli florets
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • honey
  • 1 tbsp gochujang
  • 1/4 cup water
  • kosher salt to season
  • sesame seeds
  • cilantro
  • limes

Instructions

  • Slice and dice the salmon into 1 inch cubes. Combine the remaining marinade ingredients and toss well with the salmon. Season with salt and pepper, cover and refrigerate for at least 2 hours.
  • Preheat the oven to 400 degrees F. Arrange the salmon onto a baking tray or wire rack coated with cooking oil. Cook until golden and the edges are crispy, about 20 minutes.
  • Meanwhile prepare the vegetables. To a large hot skillet, add the green beans and broccoli and a splash of water. Cover and let cook for about 4 minutes. Remove the lid and season with salt, sesame oil and minced garlic. Continue to cook. Mix the gochujang with water to loosen up the paste and add to the vegetables along with some honey. Give everything a good stir and cook until tender and lightly browned.
  • Transfer the vegetables onto serving plates, top with salmon and serve garnished with sesame seeds, cilantro and serve with fresh lime.
