pizza crostini's

bite sized garlic infused crostini's topped with tomato sauce, salt, pepper, chili flakes, and mini mozzarella balls baked until the cheese is nice and melted and topped with some fresh basil and basil oil.

Ingredients

  • 1 baguette
  • 2 garlic cloves
  • 1/2 cup tomato puree or passata
  • 1/2 cup cherry tomatoes, halved
  • 1 package mini mozzarella balls
  • salt and pepper
  • red pepper chili flakes
  • olive oil
  • fresh basil
  • honey optional
  • basil oil optional

Instructions

  • preheat the oven to 375 degrees F
  • Cut the baguette on a diagonal into crostini's and arrange on a large baking tray and drizzle a touch of olive oil overtop.
  • lightly toast the baguette pieces for 1-2 minutes, remove from the oven and brush the garlic cloves overtop the crostini's.
  • Spread about 1 tbsp of tomato sauce onto each piece, season with salt and pepper, top with halved tomatoes and torn mozzarella balls. Finish with chili flakes, another drizzle of oil and bake for 5-6 minutes or until the cheese has melted and is bubbling.
  • Remove from the oven and finish each piece with fresh basil, and a drizzle of honey. Enjoy!
