Hot Honey Buttermilk Wings

Crispy golden brown chicken wings soaked overnight in spices and buttermilk, dusted and fried then topped with a simple hot honey sauce.

Ingredients

  • 25-30 wings
  • 2 cups buttermilk
  • 2 TBS mesquite seasoning
  • 1 TBS chipotle chili pepper
  • 1 TBS garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp cracked pepper
  • 1 TBS brown sugar
  • 2 cups all-purpose flour
  • 1/3 cup cornstarch
  • vegetable oil for frying
  • Hot honey sauce:
  • 1/3 cup hot sauce
  • 1 1/2 TBS butter
  • 1-2 TBS honey

Instructions

  • Combine all the spices and brown sugar together. In a large bowl add the wings, cover with the spice blend tossing to ensure each wing is nicely coated. Cover with the buttermilk ensuring the wings are all submerged. Cover with plastic wrap and refrigerate overnight.
  • Preheat the oil to 350 degrees F in a large frying pot.
  • In a large shallow bowl or baking tray combine the flour and cornstarch. Add the wings tossing until fully coated. Set aside and repeat until all the wings have been dusted in flour.
  • To the hot oil, drop 5-6 wings at a time making sure not to overcrowd. Cook for 7-8 minutes or until the internal temperature reaches 165 degrees F. Place on a baking tray lined with a wire rack to allow excess to drip off. Repeat until all the wings are cooked.
  • To make the sauce: in a small saucepan, melt the butter. Once the butter is melted, add the honey and hot sauce. bring to a gentle boil and reduce to simmer. Allow to thicken for 5 minutes. Adjust and taste if needed.
  • Serve wings as desired by tossing in the sauce, serving on the side or drizzle a little bit overtop. Enjoy!
