Ingredients

  • 1 lb minced beef
  • 2 TBS olive oil
  • 1 medium white onion roughly chopped
  • 1 TBS ginger thinly sliced
  • 1 TBS ginger garlic and chili paste, substitute bird's eye chilies + minced garlic
  • 1 cup broccoli cut into florets + stem
  • 1/2 cup sweet peppers or bell pepper julienned
  • 4 spring onions finely diced
  • 1 TBS brown sugar
  • 1 TBS oyster sauce
  • 2 TBS soy sauce
  • 1 TBS dark soy sauce
  • fresh basil to serve

Instructions

  • To make the stir-fry sauce, mix together the brown sugar, oyster sauce and both soy sauces. Set aside.
  • Bring a large pot of water to a boil. Once the water is boiling cook the noodles according to package directions.
  • Heat oil in a wok or large frying pan over high heat. Add the ginger cooking for a few seconds. Add the minced beef and stir-fry breaking apart as it cooks for 4 minutes. When half the meat is browned but still pink, add the onions and continue to stir and cook until softened. Mix in the vegetables and continue to stir-fry on high until they begin to brown and crisp a little.
  • Once the noodles are cooked, pull them out of the water and toss them directly into the stir-fry. If your noodles are done well before you are ready to add them in with the meat and vegetables, you can drain them and set them aside.
  • Once the noodles are in the stir-fry, pour the sauce overtop and toss to combine. Remove from the heat and top each bowl with fresh basil and spring onions. Enjoy!
