Peach and Bacon Grilled Cheese

Grilled summer peaches and crispy bacon sandwiched with melted cheddar cheese, spicy habanero aioli and sweet honey mustard in between toasted sourdough bread.

Ingredients

  • 4 slices sourdough bread
  • 3 large peaches pitted and thinly sliced
  • 6 slices thick cut maple bacon
  • 4 slices American cheddar cheese
  • Honey mustard
  • Habanero aioli see notes
  • 2 TBS salted butter room temperature

Instructions

  • Preheat BBQ or a grill to 350 degrees F. Coat the peach slices with some cooking oil on both sides. Lightly spray the grill with cooking oil and grill bacon slices and peaches at the same time. Flip once and cook until bacon is crispy and peaches are grilled.
  • Brush the outside of each sourdough slice with butter. On the inside half of the bread, spread a generous amount of habanero aioli and honey mustard. On one half, layer cooked bacon, grilled peaches and top with cheese slices and close with the other top piece of sourdough.
  • Return the sandwiches to the grill or heat in a pan. Cook sandwiches until the bread is nicely toasted and cheese has melted. Roughly 3 minutes per side. Enjoy!

Notes

Habanero aioli:
  • 1/2 cup mayonnaise
  • 3 habanero chilies, seeds removed
  • 1/2 tsp white wine vinegar
  • 1 clove of garlic
  • 1/2 tsp sugar
  • 1 TBS lemon juice
*combine all the ingredients into a food processor and blend until smooth.
