watermelon mint lemonade

Freshly juiced and squeezed watermelon mixed with homemade mint simple syrup and lemon juice.

Ingredients

  • 2 heaping cups cubed seedless watermelon
  • 1 cup lemon juiced (roughly 5 large lemons)
  • 4 oz mint simple syrup
  • optional: tajin rim
  • ice

Instructions

  • To a blender add the chunks of watermelon, rind removed. Strain to remove all the pulp. Should yield roughly 5 cups of juice.
  • Juice all the lemons ensuring to remove all the seeds.
  • Mix juiced watermelon and lemon juice together by adding to a large pitcher. Pour in 4 oz of mint syrup (add more if wanting to taste sweeter) stir until just combined.
  • Rim serving glasses with mint syrup and roll into tajin. Add ice to the glass and pour in the lemonade blend. Enjoy!

Notes

Mint syrup: combine equal parts sugar and water (1/2 cup each) bring to a slow boil and reduce to simmer. Once all the sugar is dissolved, add a handful of mint with stems and simmer for 10 minutes. Cool slightly before using. Keep refrigerated 1 week.
